- 2 cups brownie chunks about a third of an 8x8 pan
- 18oz frozen raspberries, thawed
- 1/2 cup granulated sugar, divided
- Zest of an orange
- 8oz mascarpone cheese
- 3/4 cup heavy cream"
- 1 tsp vanilla extract
Cut your favorite chocolate - either a box or a house about 3 / 4 "1" cubes made of. Set aside.
Raspberries, orange zest, and 1 / 4 cup sugar in a mixing bowl. Stir until well blended, and set aside.
In a medium bowl, mascarpone, heavy cream, vanilla and remaining sugar 1 / 4 cup tie. (I use powdered sugar, I prefer that you do not have any sudden sugar granules that dissolve, but it is not necessary.) Medium with an electric mixer until firm peaks form Beat the mascarpone mixture.
To assemble, 6 individual dessert cups (small juice glasses work well for this) and place some brownie part. Mascarpone mixture about 2 1 / 2 tablespoons of the chocolate on top, with about 3 tablespoons of the raspberries. Repeat until all elements have been divided equally between the cups.
You can serve this in a small bowl, but I think the mini, individual servings are good for entertainment. Refrigerate until serving. Serve chilled.
