Guacamole Salad Recipe

Ingredients:

For The Dressing
  • 1 medium ripe avocado , peeled and roughly chopped
  • 1 tomato , roughly chopped
  • 2 tsp lemon juice
  • 1 tsp oil
  • salt to taste
Other Ingredients
  • 1 cup lettuce , torn into pieces
  • 1 cup chopped apples
  • 1/2 tsp lemon juice
  • 1/2 cup soaked and cooked rajma (kidney beans)
  • 1/4 cup cooked sweet corn kernels (makai ke dane)
  • 1/4 cup chopped spring onion greens
Method:

For the dressing

Combine all ingredients in a bowl and mash with back of a spoon gently. Put aside.

How to proceed

Pot filled with cold water for half an hour to keep the salad. It will make them crisp.
Drain, wrap in a linen cloth refrigerate until ready to use.
Toss apples in lemon juice and keep refrigerated.
Just before serving, combine all ingredients in a bowl, add dressing and toss well.
Serve immediately.
